- 1 unbaked 9-inch pie shell
- 1 c. cooked pinto beans
- 1 c. sugar
- 1 c. dark corn syrup
- 4 eggs
- 1/2 c. shredded coconut
Directions

1Preheat oven to 400°.

2Mash pinto beans.

3Add sugar, syrup and unbeaten eggs.

4Beat together with a wooden spoon until sugar is dissolved.

5Stir in coconut.

6Pour into unbaked pie shell.

7Bake for 10 minutes at 400°, then turn down oven heat to 375° and bake another 20 minutes.

8Let cool before serving.
