  • 1 unbaked 9-inch pie shell
  • 1 c. cooked pinto beans
  • 1 c. sugar
  • 1 c. dark corn syrup
  • 4 eggs
  • 1/2 c. shredded coconut

    Preheat oven to 400°.

    Mash pinto beans.

    Add sugar, syrup and unbeaten eggs.

    Beat together with a wooden spoon until sugar is dissolved.

    Stir in coconut.

    Pour into unbaked pie shell.

    Bake for 10 minutes at 400°, then turn down oven heat to 375° and bake another 20 minutes.
