  • 1 c. solid vegetable shortening
  • 2 c. sugar
  • 5 eggs
  • 2 c. flour
  • 1 1/2 tsp. baking powder
  • 1 tsp. salt
  • 1 c. buttermilk
  • 1 c. flaked coconut

Directions

    Cream shortening and sugar together.

    Add eggs, one at a time, beating well after each.

    Sift dry ingredients together and add alternately with buttermilk.

    Add flavoring and coconut.

    Bake in greased and floured tube pan at 350° for 50 to 60 minutes.
