Coconut Raspberry Pancakes

- 1 12 cups self-raising flour
- 12 cup caster sugar
- 2 eggs, separated
- 375 ml coconut-flavoured evaporated milk
- 150 g frozen raspberries
Directions

1Combine flour and sugar in a large bowl.

2Whisk in egg yolks and milk until smooth.

3Add raspberries.

4Stir to combine.

5Place egg whites in a small bowl.

6Beat with an electric mixer until firm peaks form.

7Fold into pancake batter in two batches.

8Heat non-stick frypan over a low to medium heat.

9Spray with cooking oil.

10Pour 1/3 cup of batter into pan.

11Cook for 2minutes or until bubbles appear on surface of pancakes.

12Turn and cook until browned underneath.

13Repeat with remaining batter.
