  • 2 cups jasmine rice, thoroughly rinsed and drained
  • 1 1/2 cans unsweetened coconut milk (mixed to combine the cream and milk)
  • 1 cup water
  • 1 tsp salt
  • 1 tsp sugar
  • 2 scallions chopped

Directions

    Combine the coconut milk, water, sugar and salt in a sauce pan and bring to a boil. Add rice, stir, cover and cook until done, approximately 15-18 minutes. Remove from heat and let stand, covered, for 5-10 minutes. Fluff with fork, and sprinkle with scallions for garnish.
