- 1 lb. rice
- 4 oz. sugar
- 1 fresh coconut
- 2 oz. butter
- 8 oz. raisins
- 4 c. water
- salt
Directions

1Open the coconut and shred the coconut meat inside.

2Drain the coconut, but keep the coconut milk.

3Put the coconut milk in a saucepan and heat it to boiling until it becomes dark.

4(This is called titote.)

5Add the sugar until the titote turns golden.

6Add the 4 cups of water with the raisins and let the mixture boil for 20 minutes.

7Add salt (to taste) and the rice and cook until almost dry, about 20 minutes.

8Add the butter and stir.

9Cover and let simmer for awhile on low heat.

10Serves 6 to 8.
