Coconut Rice

Ingredients

  • 1 lb. rice
  • 4 oz. sugar
  • 1 fresh coconut
  • 2 oz. butter
  • 8 oz. raisins
  • 4 c. water
  • salt

Directions

    Open the coconut and shred the coconut meat inside.

    Drain the coconut, but keep the coconut milk.

    Put the coconut milk in a saucepan and heat it to boiling until it becomes dark.

    (This is called titote.)

    Add the sugar until the titote turns golden.

    Add the 4 cups of water with the raisins and let the mixture boil for 20 minutes.

    Add salt (to taste) and the rice and cook until almost dry, about 20 minutes.

    Add the butter and stir.

    Cover and let simmer for awhile on low heat.

    Serves 6 to 8.
