- 2 cup coconut milk
- 1 cup rice
- 1/2 cup shredded coconut
- 1 large pinch sugar
- 1 large pinch salt
Directions

1Spread shredded coconut on top of parchment or silpat on a baking tray.

2Bake at 375 for approximately 10 minutes.

3Shake every few minutes and toss around coconut to avoid burning.

4Keep an eye on it!

5Bring coconut milk to a simmer.

6Add rice and sugar.

7Bring back to a simmer.

8Cover.

9Simmer 15 minutes.

10Remove from heat and do not remove lid.
