- 1 c. Quaker oats
- 1 c. all-purpose flour
- 3/4 c. ground almonds
- 1 c. butter or margarine
- 1 c. plus 2 Tbsp. confectioners sugar
- 1/2 tsp. almond extract
- 3/4 c. Bakers coconut (flaked and shredded)
Directions

1Heat oven to 350°.

2In medium bowl, combine oats, flour and almonds.

3In large bowl, beat together butter and 1/4 cup sugar until light and fluffy.

4Add almond extract; mix well.

5Stir in oats mixture, mixing well.

6Shape into 1-inch balls and roll in coconut.

7Place 1-inch apart on ungreased cookie sheet.

8Bake about 15 minutes or until golden brown.

9Cool completely on wire rack.

10Lightly sift remaining 2 tablespoons confectioners sugar over cookies.

11Makes about 3 dozen cookies.
