- One pound of winter squash, baked or steamed.
- 4 tablespoons of butter
- 2 tsp of fennel seeds, crushed
- 1/2 tsp of cardamom seeds crushed
- 1-2 tsps hot green chilis, seeded and minced
- 2-3 tablespoons maple syrup
- 1 tsp salt
- 1/2 cup shredded coconut
- 2 tblspoons lime juice
Directions

1cook and mash squash

2heat 3 tablespoons of butter in skillet when it is hot and frothy add fennel, cardamom and chilis. Within seconds add squash, maple syrup and salt. Cook, stirring frequently until thickened about 5 minutes. Right before serving add remaining butter coconut and lime juice
