Ingredients

  • One pound of winter squash, baked or steamed.
  • 4 tablespoons of butter
  • 2 tsp of fennel seeds, crushed
  • 1/2 tsp of cardamom seeds crushed
  • 1-2 tsps hot green chilis, seeded and minced
  • 2-3 tablespoons maple syrup
  • 1 tsp salt
  • 1/2 cup shredded coconut
  • 2 tblspoons lime juice

    cook and mash squash

    heat 3 tablespoons of butter in skillet when it is hot and frothy add fennel, cardamom and chilis. Within seconds add squash, maple syrup and salt. Cook, stirring frequently until thickened about 5 minutes. Right before serving add remaining butter coconut and lime juice
