- 2 onions
- 4 stalks celery
- 1 green pepper
- green onion tops
- garlic to taste
- 2 cans stewed tomatoes
- 3 oz. wine
- 2 bay leaves
- thyme to taste
- 1 Tbsp. paprika
- cayenne pepper
- salt
- cornstarch
- water
Directions

1Saute onions, celery, green pepper, green onion tops and garlic.

2Add tomatoes, seasonings and water.

3Use cornstarch to thicken mixture.

4Add wine and cook about 30 minutes.

5Pour over fish fillets in a shallow baking dish.

6Bake about 20 minutes. Serve over rice with salad.
