Coffee Cream Caramel

Ingredients

  • 2 c. evaporated milk
  • 2 c. sugar
  • 2 c. light corn syrup
  • 1/2 c. butter
  • 1/2 c. (very strong) coffee
  • 1/2 tsp. salt
  • 1 tsp. vanilla

Directions

    Add milk to coffee.

    Boil sugar, syrup and salt to firm ball stage (245°).

    Add coffee mixture and butter very slowly, as boiling must not stop.

    Cook and stir constantly to 242°.

    Add vanilla.

    Pour 3/4-inch deep in buttered pans.

    Cool; mark in squares.

    Chill until very firm.

    Remove from pan and cut into squares.

    Wrap in waxed paper.
