- 2 1/3 cups flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 pinch salt
- 2 tablespoons instant coffee
- 1 cup milk
- 1/2 cup butter melted
- 2 eggs
- 1 cup sugar
- 2 tablespoons instant coffee
- 1 tablespoon water
- 150 grams cream cheese
- 7 tablespoons superfine sugar
Directions

1Preheat the oven to 200 degrees Celsius.

2In a bowl, sift the flour, baking powder, baking soda, and salt.

3Dissolve the coffee in the milk. Add the butter, eggs, and sugar. Mix well. Add to the flour and mix. Do not overbeat.

4Pour the butter into a muffin pan and fill about 3/4 full.

5Bake for 25 minutes.

6Take out of the oven and let the muffins cool completely.

7Dissolve the coffee in the water.

8Using an electric mixer or food processor, puree the dissolved coffee, cream cheese, and sugar until smooth.
