  • 3/4 c. light brown sugar
  • 4 egg yolks, separated
  • 1 1/3 c. ground pecans
  • 1 Tbsp. dried white bread crumbs
  • 1 Tbsp. strong coffee or Espresso
  • 3 egg whites
  • 1 1/4 c. whipping cream
  • 1 Tbsp. strong coffee
  • 3 to 4 Tbsp. maple syrup
  • 2 (1 oz.) sq. semi-sweet chocolate
  • pecan halves, chocolate coffee beans and drizzled melted chocolate (garnish)

Directions

    In a bowl, beat sugar and egg yolks until light.

    Gently fold in nuts and bread crumbs, then stir in coffee.

    In another bowl, whisk egg whites until soft peaks form; fold into mixture.

    Pour into round cake form and bake in a preheated oven at 350° for 25 to 30 minutes until well risen and firm to touch.

    Cool on wire rack.
