- 2 tablespoons instant coffee
- 1 teaspoon vanilla extract
- 3 cups flour
- 1 teaspoon salt
- 1/2 teaspoon cinnamon
- 1 1/4 cups butter, softened
- 1 1/4 cups powdered sugar
Directions

1Preheat oven to 325 degrees.

2Stir the instant coffee and vanilla in a small bowl until well blended; set aside.

3Mix the flour, salt and cinnamon in a medium bowl; set aside.

4Beat the butter in a large bowl with an electric mixer set at medium speed until smooth and creamy.

5Gradually add the powdered sugar, beating until well blended.

6Beat in coffee mixture, then flour mixture.

7Beat on low speed until blended.

8Press firmly into a 13x9 inch pan. Pierce the entire dough at 1-inch intervals with a fork.

9Bake for 30-35 minutes, or until the edges are slightly browned.

10Let cool for 5 minutes, then cut into bars while warm.
