- 1 1/2 lb. potatoes
- 1/3 c. butter or margarine
- 2 c. shredded cabbage
- 6 scallions, sliced
- 1/3 c. milk
- salt and pepper
Directions

1Clean, pare and quarter potatoes.

2Cook in unsalted water for about 15 minutes, or until tender.

3While potatoes are cooking, melt butter in saucepan.

4Add cabbage and scallions.

5Cover; cook over low heat until tender, about 5 or 10 minutes.

6When potatoes are done, drain well and mash.

7Gradually add hot milk; beat until fluffy.

8Sprinkle with salt and pepper to taste, mixing well.

9Add cabbage and scallions to mashed potatoes; turn into serving dish. Makes 6 servings.
