Cold Berry Soup

Ingredients

  • 1-1/2 qt. apple juice
  • 3 cups red wine
  • 10 oz. sugar
  • 1/2 cup lemon juice
  • 2 lb. strawberries
  • 1 lb. blueberries
  • 2 oz. gelatin

Directions

    Combine apple juice, red wine and lemon juice.

    Add strawberries and blueberries to juice mxture.

    Soak at least one hour.

    Drain juice from berries, reserving them in separate bowl.

    Bring juice to a boil.

    Dissolve gelatin in water and add to boiling juice; stir until slightly thickened and clear.

    Chop berries and add to thickened mixture.

    Keep refrigerated; this will hold no longer than 48 hours.

    Garnish with sour cream or yogurt and a sprig of mint.
