Cold Mushroom Soup

- 2 tablespoons butter
- 2-3 minced shallots
- 1 1/2 pounds mushrooms, chopped fine
- 6 cups chicken broth
- 1/2 teaspoon salt
- 1 teaspoon fresh lemon juice
- 1 lemon, thinly sliced
Directions

1Using a food processor, chop mushrooms in batches for consistency.

2Melt butter in large saucepan.

3Add shallots and cook until translucent, about 5 min.

4Add mushrooms and cook 5 minutes longer, stirring occasionally.

5Add chicken broth and bring to a boil.

6Reduce heat and simmer, uncovered, for 30 minutes.

7Cool.

8Strain the soup through a coarse sieve, pressing firmly to extract all the liquid. Some spects of mushroom should go through.

9Season with salt and lemon juice and garnish with lemon slices.
