- 2 lb. salmon
- 4 hard-boiled eggs
- 4 tomatoes
- 1 c. cleaned shrimp
- 2 heads lettuce
- 1 cucumber
- 1 bunch parsley
- mayonnaise
Directions

1Boil salmon; skin and bone carefully.

2Cool in stock.

3Serve on a round platter on a bed of crisp lettuce leaves and sliced cucumbers.

4Garnish with sliced eggs, tomatoes and parsley. Garnish with mayonnaise; sprinkle with fresh dill and shrimp. Serve extra mayonnaise.

5Halibut or trout may be substituted for salmon.
