Cold Salmon Foam

  • 15 oz. canned salmon
  • 1/4 c. olive oil
  • 2 Tbsp. lemon juice
  • pinch of salt
  • freshly ground pepper, about 6 twists of the mill
  • 1-1/2 c. very cold whipping cream

Directions

    Drain the salmon and look it over carefully for bones and bits of skin.

    Using a fork, crumble it in a mixing bowl.

    Add the oil, lemon juice, salt, and pepper.

    Beat them into the salmon until you've obtained a smooth, evenly blended mixture.
