- 8 slices bread
- 2 tablespoons low-fat mayonnaise
- 1 tablespoon mustard
- 1/4 cup bell peppers canned, sliced
- chipotle chili to taste
- 1 tablespoon pickle brine
- salt
- ground black pepper
- 284 grams canned tuna
- 1 carrot peeled and diced
- 1/4 cup pickles finely chopped
- 1/2 cup sour cream
- olives
- chili jalapeno, in strips
Directions

1Remove the bread crusts.

2Using a food processor, mix the mayonnaise, mustard, bell peppers, chipotle, brine, and salt and pepper to taste.

3Mix with the tuna, carrot, and pickles.

4In square baking pan, place 4 slices of bread. Add the tuna and cover with the other 4 slices of bread.

5Spread the sour cream on top, then add salt as needed. Garnish with olives or chili.
