  • 8 slices bread
  • 2 tablespoons low-fat mayonnaise
  • 1 tablespoon mustard
  • 1/4 cup bell peppers canned, sliced
  • chipotle chili to taste
  • 1 tablespoon pickle brine
  • salt
  • ground black pepper
  • 284 grams canned tuna
  • 1 carrot peeled and diced
  • 1/4 cup pickles finely chopped
  • 1/2 cup sour cream
  • olives
  • chili jalapeno, in strips

Directions

    Remove the bread crusts.

    Using a food processor, mix the mayonnaise, mustard, bell peppers, chipotle, brine, and salt and pepper to taste.

    Mix with the tuna, carrot, and pickles.

    In square baking pan, place 4 slices of bread. Add the tuna and cover with the other 4 slices of bread.

    Spread the sour cream on top, then add salt as needed. Garnish with olives or chili.
