Company Cheese Soup

  • 3 c. diced potatoes
  • 1 c. chopped onions
  • 1 c. diced celery
  • 1 1/2 qt. water
  • 4 chicken bouillon cubes
  • Cauliflower and broccoli flowerettes or 1 pkg. frozen California Mixed vegetables
  • 2 cans cream of chicken soup
  • 1 lb. Velveeta cheese

Directions

    In a large pot or kettle, boil potatoes, onions, celery (with water) and bouillon cubes for 20 minutes.

    Add cauliflower and broccoli and boil 10 more minutes.

    Add chicken soup and cheese. Cook until the cheese is melted (do not boil).

    Serve with crusty French bread.
