  • 3/4 cup red wine vinegar
  • 3/4 cup water
  • 1/4 cup olive oil
  • 1/2 tsp. salt
  • 1/2 tsp. black pepper
  • 2 cloves garlic, minced
  • 1 large head cauliflower cut into flowerette.
  • one 14.5 ounce can diced tomatoes, drained
  • 1/2 cup minced red onion
  • 1/2 cup chopped bell pepper
  • 1 cup grated carrots
  • 1/8 cup chopped fresh basil leaves
  • 1/8 cup chopped flat-leaf parsley

Directions

    Combine vinegar, water, oil, salt, black pepper and garlic in a large saucepan. Add cauliflower, bring to a boil and simmer for ten minutes. Chill. Add remaining ingredients, mix and pour into serving bowl. Serve chilled or at room temperature.
