- 1 lb. cod or flounder fillets
- 1 c. bread crumbs
- 1/4 tsp. basil
- 1/3 c. finely chopped onions
- 1/3 c. chopped green pepper
- 2 Tbsp. grated carrot
- 1/4 c. safflower oil
- 1 1/2 tsp. cider vinegar
Directions

1Preheat broiler to hot.

2Place fish in oiled shallow pan in single layer.

3In a small bowl combine crumbs, basil, onions, green pepper, carrot, oil and vinegar.

4Spread mixture on fish. Broil 6 inches from heat until fish flakes easily.
