Ingredients

  • 3 large tomatoes, cored and halved
  • 1 large red bell pepper
  • 1 large green bell pepper
  • 2 to 3 small white onions, chopped fine
  • 1 c. lightly packed cilantro leaves
  • 2 jalapenos, minced or more to taste
  • 1 clove garlic, pressed
  • 7 Tbsp. lime juice
  • 1 tsp. salt
  • few drops hot pepper sauce
  • 1 1/2 c. frozen corn kernels, thawed
  • 1 c. canned black beans, rinsed and drained
  • 1/2 tsp. cumin

    Coarsely chop tomatoes and fresh peppers.

    Combine with remaining ingredients.

    Makes about 5 cups.

    Serve in clear glass bowl to best enjoy colorful appearance of salsa.
