- 3 Tbsp. butter
- 1 medium onion, chopped
- 1 medium bell pepper, diced
- 2 medium zucchini, sliced
- 2 medium yellow squash, sliced
- 14 1/2 oz. can tomatoes, cut up
- 1/2 tsp. garlic salt
- salt and pepper
Directions

1Melt butter in skillet, add onion and cook until soft.

2Stir in bell pepper and cook until soft.

3Add squash and seasonings; cover and simmer until tender.

4Drain tomatoes, save the liquid and add them to the skillet.

5Cook 5 to 8 minutes more, adding some of the tomato liquid if needed.

6Sprinkle with Parmesan cheese.
