- 3 1/3 c. Baker's Angel Flake coconut
- 2 sq. semi-sweet chocolate, melted
- 1 qt. ice cream (any flavor), slightly softened
- 1/2 c. strawberry preserves
Directions

1Mix 2 cups of the coconut into the melted chocolate, stirring until coconut is completely coated.

2Press evenly over bottom of an 8-inch square pan.

3Spoon ice cream over coconut; press firmly into pan.

4Top with strawberry preserves.

5Press remaining coconut over preserves.

6Cover.

7Freeze several hours or overnight.
