- 3 large cucumbers
- 3 Tbsp. butter
- 1/2 c. milk
- 6 oz. grated cheese
- 2 Tbsp. flour
- salt and black pepper to taste
Directions

1Peel cucumbers.

2Quarter lengthwise and remove seeds.

3Cut on slant into diamond shapes.

4Melt butter in a large, heavy pan and saute cucumbers in butter for 7 to 10 minutes; add milk and heat to warm.

5Toss cheese with flour and add slowly to cucumbers. Season with salt and pepper.
