Ingredients

  • 5 slices bacon, diced
  • 2/3 c. sliced green onion
  • 2 1/2 lb. cut-up frying chicken
  • 4 to 6 small white onions
  • 1/4 lb. whole mushrooms
  • 6 to 8 small new potatoes
  • 1 crushed garlic clove
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1/2 tsp. thyme
  • 1/2 c. chicken broth
  • 1/2 c. Burgundy wine
  • chopped parsley

Directions

    Saute bacon and onion until bacon is crisp; drain.

    Add chicken to skillet.

    Brown well; remove.

    Put onions, mushrooms and garlic in skillet.

    Add all ingredients except wine and parsley.

    Cook on medium heat 3 to 4 hours, then add wine and parsley.
