  • 3 c. frozen corn, thawed and drained
  • 1 1/2 c. nonfat evaporated milk
  • 1 Tbsp. reduced-calorie butter
  • 1 1/2 Tbsp. flour
  • 1/2 Tbsp. salt
  • 2 Tbsp. Parmesan cheese
  • 1 Tbsp. reduced-calorie butter, melted
  • 1 Tbsp. sugar

Directions

    Mix corn and milk and bring to a boil.

    Separate corn from milk and return milk to fire.

    Make paste from margarine and flour, adding the paste to milk to thicken.

    Simmer 5 minutes and add salt and sugar.

    Return corn to milk and bring back to a boil over low heat.

    Transfer creamed corn to casserole dish.

    Sprinkle evenly with Parmesan cheese.
