- 1 1/2 c. yellow corn meal
- 1 c. all-purpose flour
- 1/3 c. sugar
- 1 tsp. salt
- 1 Tbsp. baking powder
- 2 eggs
- 6 Tbsp. butter
- 8 Tbsp. vegetable shortening
- 1 1/2 c. milk
Directions

1Preheat oven to 400°.

2Sift into a bowl corn meal, flour, sugar, salt and baking powder.

3Melt butter and shortening.

4Cool. Beat eggs lightly.

5Add butter and shortening.
-
6Stir in milk.
-
7Add to dry ingredients and beat 1 minute until smooth.

8Do not overbeat.
-
9Butter a loaf pan.
-
10Pour in batter.
-
11Bake 30 minutes or until bread comes slightly away from edge of pan and is golden brown.
