  • 1 1/4 c. yellow cornmeal
  • 3/4 c. all-purpose flour
  • 1/4 c. granulated sugar
  • 4 tsp. baking powder
  • 1/2 tsp. salt
  • 2 large eggs, lightly beaten
  • 1 1/4 c. milk
  • 1/2 c. vegetable oil
  • 2 c. flour
  • 1 c. sugar
  • 1 1/2 tsp. baking powder
  • 2 tsp. cinnamon
  • 1/2 tsp. salt
  • 1/2 tsp. baking soda
  • 1 c. chopped walnuts (may use raisins or dates or both, if desired)
  • 1 large box vanilla instant pudding

Directions

    Combine with the wet mixture and mix together well.

    Pour into two large greased loaf pans. Sprinkle with cinnamon and sugar. Bake at 325° for 1 hour.

    Remove from pans and place on wire rack to cool.

    May be served warm or cold.

    Stores well in freezer.
