- 1 c. all-purpose flour
- 1 c. yellow, white or blue corn meal
- 2 to 4 Tbsp. sugar
- 1 Tbsp. baking powder
- 1/2 tsp. salt
- 2 eggs
- 1 c. milk
- 1/4 c. cooking oil or shortening, melted
Directions

1In a mixing bowl, stir together flour, corn meal, sugar, baking powder and salt.

2In another bowl, beat together eggs, milk and oil or melted shortening.

3Add to flour mixture and stir just until batter is smooth (do not overbeat).

4Pour into a greased 9 x 9 x 2-inch baking pan.

5Bake in a 425° oven for 20 to 25 minutes or until golden brown.

6Makes 8 or 9 servings.
