- 1 egg
- 1 1/2 c. buttermilk
- 1/2 tsp. soda
- 1 1/2 c. corn meal
- 1 tsp. salt
- 1/2 c. sifted flour
- 3 tsp. baking powder
- 1 tsp. sugar
- 1/4 c. melted butter
Directions

1Set pan in a 450° oven to preheat.

2Beat egg until light. Beat in buttermilk and soda.

3Sift dry ingredients; add to liquid mixture.

4Beat in butter.

5Grease hot pan (muffin or 10-inch pie plate); fill almost full with mixture.

6Bake for about 15 minutes. Remove from oven; brush top with soft butter.

7Place under broiler for about 1 minute, or in very hot oven for 3 to 4 minutes, until golden brown.
