- 2 eggs
- 1 c. yellow cornbread (self-rising)
- 1 tsp. salt
- 1 (15 oz) can cream corn
- 1 c. milk
- 1/4 c. vegetable oil
- 1 lb. ground beef
- 2 c. (8 oz) shredded cheese
- 1 (12 oz) jar salsa
Directions

1Combine eggs, cornmeal, salt, corn, milk, and vegetable oil in bowl; set aside.

2Cook ground beef until browned.

3Drain, set aside.

4Pour half cornmeal mixture into a greased 10 1/2 inch iron skilled.

5Sprinkle evenly with ground beef, pour on salsa and top with cheese.

6Pour the rest of batter over top.

7Bake at 350 degrees for 45 to 50 minutes.

8Let stand.
