Corn Bread Taco Bake

  • 1 1/2 lb. ground beef
  • 1 (1 1/8 oz.) pkg. Durkee taco seasoning
  • 1/2 c. water
  • 1 (12 oz.) can whole kernel corn, drained
  • 1/2 c. chopped green pepper
  • 1 (8 oz.) can tomato sauce
  • 1 (8 1/2 oz.) pkg. corn muffin mix, plus ingredients to prepare mix
  • 1 (2.8 oz.) can Durkee French fried onions
  • 1/2 c. (2 oz.) shredded Cheddar cheese*

    Preheat oven to 400°.

    In large skillet, brown ground beef; drain.

    Stir in taco seasoning, water, corn, green pepper and tomato sauce.

    Pour mixture into 2-quart casserole.

    Prepare corn muffin mix according to package directions; stir in 1/2 can onions.

    Spoon corn muffin batter around edge of beef mixture. Bake, uncovered, at 400° for 20 minutes or until corn bread is done.

    Top corn bread with cheese and remaining onions; bake, uncovered, for 1 to 3 minutes or until onions are golden brown. Makes 6 servings.
