  • 3/4 c. corn meal
  • 1 c. flour
  • 1/4 c. sugar
  • 4 tsp. baking powder
  • 1 c. milk or buttermilk
  • 1/2 tsp. salt
  • 1 egg, well beaten
  • 2 Tbsp. melted fat

Directions

    Mix and sift dry ingredients; add egg, milk and melted fat. Bake in shallow greased pan in moderate oven, 350°, for 20 minutes.

    If buttermilk is used, use only 2 teaspoon baking powder and 1 teaspoon soda.

    Drizzle caramel icing over cake.
