- 1 (16 oz.) can cream-style corn
- 1/2 c. flour
- 1/3 c. minced chives
- 1 egg
- 3 Tbsp. vegetable oil
Directions

1In a medium bowl, combine the corn, flour, chives and egg. Beat until well-blended.

2Heat a large heavy frying pan, preferably cast iron, over medium-high heat.

3Add 2 tablespoons of the oil. When oil is hot, gently drop in the batter by heaping tablespoonfuls and cook cakes until the bottoms are golden brown, about 1 minute.

4Turn cakes over and brown other side.

5Repeat, using all batter and remaining oil if skillet becomes dry.

6Makes 4 servings.
