- 3 cans cream-style corn
- 3 eggs
- 1 1/2 c. Minute rice, uncooked
- 1 bell pepper
- 1 onion
- 1 tsp. salt
- 1 stick Parkay margarine
- pepper to taste
- 3 Tbsp. sugar
- Cheddar cheese
Directions

1Chop bell pepper and onion and saute in margarine.

2Mix corn, eggs (slightly beaten), rice, bell pepper and onion together. Add salt, pepper and sugar.

3Place in 9 x 13-inch baking dish. Cover top with grated Cheddar cheese.

4Cover with foil and bake at 350° for 45 to 55 minutes.
