- 1 can whole kernel corn (don't drain)
- 1 c. sour cream
- 1 stick melted margarine
- 2 eggs, slightly beaten
- 1 box Jiffy corn muffin mix
- 1 c. Mozzarella cheese
Directions

1Mix first 5 ingredients in order listed, then muffin mix. Bake at 350° for 35 minutes; use 9 x 13-inch baking dish.

2Remove from oven and top with about 1 cup cheese.

3Return to oven until cheese is melted.
