- 1/4 c. butter
- 1 large yellow onion
- 1 green bell pepper
- 2 eggs, beaten
- 1 pkg. Jiffy corn muffin mix
- 1 (1 lb. size) can creamed corn
- 1 (1 lb.) can whole corn and juice
- grated sharp cheese
Directions

1Saute chopped onion and pepper in butter.

2Mix eggs, corn and muffin mix.

3Pour this into 9 x 13-inch greased pan.

4Spoon sauteed mixture over top of corn mixture.

5Cover with grated sharp cheese.

6Bake in 400° oven for 30 minutes or until firm in center.
