  • 1/4 c. butter
  • 1 large yellow onion
  • 1 green bell pepper
  • 2 eggs, beaten
  • 1 pkg. Jiffy corn muffin mix
  • 1 (1 lb. size) can creamed corn
  • 1 (1 lb.) can whole corn and juice
  • grated sharp cheese

Directions

    Saute chopped onion and pepper in butter.

    Mix eggs, corn and muffin mix.

    Pour this into 9 x 13-inch greased pan.

    Spoon sauteed mixture over top of corn mixture.

    Cover with grated sharp cheese.

    Bake in 400° oven for 30 minutes or until firm in center.
