  • 3 eggs
  • 1 box Jiffy corn muffin mix
  • 1 (16 oz.) can creamed corn
  • 1 (16 oz.) can whole corn, drained
  • salt and pepper
  • 2 large onions, chopped fine
  • 1 c. sour cream
  • 1/2 c. grated Cheddar cheese

Directions

    Beat eggs with fork in a large bowl until frothy.

    Add muffin mix, corn, salt and pepper to taste.

    Pour into 13 x 8-inch baking dish.

    Saute onions until clear and spread over corn mixture. Spread sour cream over all.

    Top with grated cheese.

    Bake 30 minutes at 325°.

    Serves 8 to 10.
