- 3 eggs
- 1 box Jiffy corn muffin mix
- 1 (16 oz.) can creamed corn
- 1 (16 oz.) can whole corn, drained
- salt and pepper
- 2 large onions, chopped fine
- 1 c. sour cream
- 1/2 c. grated Cheddar cheese
Directions

1Beat eggs with fork in a large bowl until frothy.

2Add muffin mix, corn, salt and pepper to taste.

3Pour into 13 x 8-inch baking dish.

4Saute onions until clear and spread over corn mixture. Spread sour cream over all.

5Top with grated cheese.

6Bake 30 minutes at 325°.

7Serves 8 to 10.
