- 1 large onion, chopped
- 1/2 c. margarine
- 1 can whole kernel corn
- 1 can creamed corn
- 1/2 pt. sour cream
- 1/2 bell pepper, chopped
- 2 eggs, beaten
- 1/2 tsp. salt
- 1 pkg. corn muffin mix
- 1/2 c. grated cheese
Directions

1Saute onion and pepper in margarine.

2Mix in a large bowl the eggs, creamed corn, whole corn with juice, corn bread mix, sauteed vegetables and salt.

3Pour into a 9 x 13-inch creased casserole. Spoon sour cream on top in small dollops.

4Just before baking, cover with cheese.

5Bake 30 minutes at 400°.
