Corn Chip Salad

  • FOR THE SALAD:
  • 1 head Leafy Lettuce, Romaine Or A Combo
  • 8 whole Hard-boiled Eggs, Shells Removed, Then Sliced
  • 1 pound Bacon, Fried Until Crispy Then Crumbled
  • 1/2 pounds Colby Jack Cheese Shreds
  • 6 cups Corn Chips, Crushed
  • FOR THE DRESSING:
  • 1 cup Miracle Whip
  • 2 Tablespoons Red Wine Vinegar
  • 1/4 cups Milk
  • 1/4 cups Sugar (scant)

Directions

    Make dressing ahead by whisking all of those ingredients together in a small bowl. Refrigerate until serving time.

    Rip lettuce into bite sized pieces and put it into a large bowl. Add sliced eggs, crumbled bacon and shredded cheese. Toss to combine.

    Add chips and dressing right before serving. Enjoy!
