  • 1 small onion
  • 2 Tbsp. butter
  • 1 c. potatoes, diced
  • 1 pkg. frozen kernel corn
  • 1/8 tsp. white pepper
  • 2 c. cold water or chicken broth
  • 1 tsp. celery salt
  • 1 c. light cream
  • 1 Tbsp. minced parsley, chives or dill

Directions

    Fry onion in butter in a heavy pan over moderate heat for 5 minutes.

    Add potatoes, corn, water, salt and celery salt.

    Cover and simmer 10 to 15 minutes until potatoes are done.

    Add milk, cream and pepper.

    Simmer 3 to 5 minutes.

    Sprinkle with herbs.
