- 1 c. chopped onion
- 7 c. fresh corn kernels
- 3 c. chicken stock, with fat skimmed off
- 1/2 c. chopped red bell pepper
- 1 Tbsp. dried rosemary
- 1 tsp. dried thyme
- 1/8 tsp. black pepper
- 1/8 tsp. ground red pepper
- 1/8 tsp. white pepper
Directions

1Preheat large, heavy saucepan over medium heat for about 1 minute. Spray it twice with vegetable oil cooking spray.

2Saute the onion for about 5 minutes until translucent. Add 4 cups of the corn and saute for 4 to 5 minutes until it softens a bit.

3Add 2 cups chicken stock and cook until the corn can be mashed easily with a fork, about 20 minutes.
