Corn Cilantro Rice Recipe

- 1 tablespoon butter
- 1 (12 ounce) can corn (reserve juice!)
- 1 cup rice
- 1/2 teaspoon chili powder
- 1 cup water
- 1 cup chopped cilantro
- 1 tablespoon butter
- 1/2 teaspoon salt
Directions

1Melt butter in saucepan over low/medium heat.

2Add corn, rice and chili powder.

3Cook and stir for about 4 minutes.

4Add the reserved corn juice to a 1 cup measuring cup and add enough water to bring it to 1 cup.

5Add the corn juice/water mix and the other cup of water to the rice.

6Bring to a boil then turn heat to low, cover and simmer for 15 minutes or until all water is absorbed.

7Add butter, cilantro and salt, stir until combined.
