Corn-Crispy Fried Chicken

  • 1 (3 lb.) broiler-fryer chicken, cut up
  • 1 c. finely crushed corn flakes
  • 1/2 c. flour
  • 1 tsp. salt
  • 1 tsp. paprika
  • dash of pepper
  • 2/3 c. evaporated milk
  • 6 Tbsp. butter (3/4 stick)

Directions

    Wash chicken; pat dry.

    Mix corn flakes, flour, salt, paprika and pepper in paper bag.

    Dip chicken pieces in evaporated milk; shake with corn flake mixture until coated.

    Melt butter in baking pan.

    Place chicken skin side down in melted butter.

    Bake in a preheated oven at 350° for 30 minutes.

    Turn chicken and bake 15 minutes longer.
