- 1 small onion, chopped
- 1/2 green pepper, chopped
- 1/4 tsp. salt
- 1/4 lb. butter (1 block)
- 1 (16 oz.) can whole corn
- 1 (16 oz.) can cream-style corn
- 3 eggs
- 1 (8 1/2 oz.) box muffin mix
- 1 1/2 c. (6 oz.) shredded Cheddar cheese, divided
Directions

1Saute onion, green pepper and salt in the butter.

2Combine both cans of corn, eggs, muffin mix and 1 cup cheese.

3Mix with onion mixture and place in a 1 1/2-quart casserole dish.

4Top with remaining cheese and bake at 350° for 40 minutes.
