  • Crisco shortening (for frying)
  • 1 c. all-purpose flour
  • 1 tsp. baking powder
  • 1 tsp. sugar
  • 1 tsp. salt
  • 2 eggs, well beaten
  • 1/2 c. milk
  • 2 tsp. Crisco, melted
  • 1 (10 oz.) pkg. frozen whole kernel corn, thawed and chopped
  • syrup

Directions

    Heat 2 to 3 inches of Crisco in deep fryer or deep saucepan. Combine flour, baking powder, sugar and salt in large bowl. Combine eggs, milk and 2 teaspoons melted shortening in medium bowl.

    Stir in corn.

    Add to flour mixture.

    Stir until moistened. Drop by tablespoon, a few at a time, in hot shortening heated to 365°.

    Fry 3 to 4 minutes or until golden brown.

    Turn as needed. Drain on paper towels.

    Serve warm with syrup.
