- vegetable oil
- 4 catfish fillets (about 4 oz. each)
- 3/4 c. corn meal
- 1/4 c. all-purpose flour
- 1/4 tsp. salt
- 1/2 c. milk
- 2 eggs, beaten
- 1/8 tsp. red pepper sauce
- 2 Tbsp. vegetable oil
Directions

1Rinse catfish fillets; pat dry.

2Refrigerate until ready to use.

3Mix corn meal, flour and salt in large bowl.

4Stir in milk, eggs, pepper sauce and 2 tablespoons vegetable oil until well blended.

5Heat oil (2 to 3 inches) in Dutch oven to 375°.

6Coat fish with corn meal batter, shaking off any excess.

7Fry fish in batches for 5 to 8 minutes, or until golden brown.

8Drain on paper towels.

9Keep warm in a 275° oven.
