  • 1 c. Crutchfields cornmeal
  • 1 c. sifted flour
  • 3 tsp. baking powder
  • 1 tsp. salt
  • 1/4 c. sugar
  • 1/4 c. oil or melted shortening
  • 1 1/4 c. milk
  • 1 egg, beaten

Directions

    Sift together the dry ingredients.

    Beat together the egg and milk and add to dry ingredients along with oil, stirring just enough to dampen.

    Fill greased muffin pans 2/3 full and bake at 400° for 25 minutes.

    Makes 12 muffins.
